EPLEKAKE // APPLE CAKE
Eplekake // Apple cake - Norwegian Recipe veganised. So muchy and good, the smell itself is a treat. Made this cake because it’s delicious, and because we got some apples that were conventionally grown, which means they might have been treated, sprayed with pesticides or similar. With our apples they had a cover of wax on them. We found this by pouring hot water on them. We peeled our apples and I put them in a cake.
Now, eating fruit wax isn’t dangerous, but I think we’re gonna stick with organic form now on, if you’re gonna stick to conventionally grown apples, it might be good to know more about it.
As for the cake

You need:
- 1 + 1/2 cups // 3dl wholegrain flour
- 2 1/2 cups // 2dl raw cane suger, brown sugar or normal sugar
- 3/4 tsp baking powder
- 2 tsp vanilla essence
- 1/2 tsp Himalayan pink salt or other types of plain salt
- 2 1/2 cups // 2dl almond or other plant based milk
- 3 tbsp // 50g vegan butter
- 2 big or 3 small apples
cinnamon and brown sugar
How:
- Mix the dry together.
- Have butter in a little sauce pan and melt, add almond milk and vanilla and stir til it’s all even out. Do not let it boil.
- Rinse(, peel) and slice half the apples into blades, cut the other half into little cubes.
- When the butter mixed have cooled a little after melting, mix with the dry and add only the cubed apples.
Add a little cinnamon. - Place in baking form, and decorate the top of the cake with the apple blades.
- Sprinkle sugar and cinnamon.
- Place in oven at 180 C // 365 F for 35min.
- Let it cool for 5 min then eat the whole thing with vanilla vegan ice cream, or vanilla icing. yes.
