LILLEJULAFTEN//TOFU SCRAMBLE

Scramble on Lillejulaften? Yes. Tofu is delicious and is a fantastic source of protein, but it needs flavour to get there - no matter which tofu kind you’re using. Once it has flavour it becomes this super versatile ingredient that goes with everything, and can be made into everything. Veggie stock/grønnsaks bulijong is the way it give it a base flavour.

Tofu Scramble: 

  • 1 tbsp olive/coconut oil
  • 250g organic firm tofu
  • 1 tsp veggie stock/ grønnsaksbuljong(essential)
  • 1/3 tsp smoked paprika
  • 2 garlic cloves
  • 3 mushrooms

How: Start with rinsing tofu in water, crumble it over a pan with olive oil on medium heat. Add veggie stock and paprika and mix well gradually till it looks like scramble. Chop and add garlic.  Add the rest of the ingredients one by one, mushrooms, tomato and onions are cut in small pieces(make sure to add the juice you get on your cutting board on the scramble). Cook till it gets a nice toasty colour. About 15 min 

Homemade Baked Beans:

  • 1 tbsp olive/coconut oil
  • 1 tin kidney beans
  • 2 garlic cloves
  • 1/2 onion
  • 1 tin of diced tomatoes
  • Spices - cumin, paprika, thyme

You can buy these pre made in Norway, in NY I haven’t found any that doesn’t contain meat. 

How: Add oil and beans in a pan. Chop garlic and onion and add with the tomatoes and spices. Let it simmer on medium and stir often.

Topping:

  • Chopped green onions
  • Crispy facon/veggie bacon cooked on medium heat 5 min
  • Fresh alfaalfa beans
  • Sourdough toast with butter and pepper 
  • Hasbrown(not pictured)
  • Avocado
