MEXICAN BOWL
This was sooo yum and so easy to make. It’s also great when you’re starting to feel like you’re not getting enough fresh greens, but it’s still cold out so you still want something warm and comforting with something fresh.
MEXI MONDAY

Black Bean Mix:
- 1 can of black beans or 1 cup dried beans soaked the night before
- 2 tomatoes, chopped
- 1 onion, chopped
- 1 small can of corn
Spice Mix or just buy a taco spice mix:
- 1 tbsp cumin
- 1 tsp smoked paprika
- 1 tsp chilli, chopped
- 4 feds garlic, chopped
- 1 tsp veggie stock
- 1/2 tsp cayenne (or less it gets spicy)
Mince
- 1/2 of Trader Joe’s Chorizo
or normal tofu (you’ll need to make more spice mix) - 1/2 onion, chopped
- 1 tomato, chopped
Salad - What ever delicious greens you’ve got lying around like:
- 1/2 head iceberg lettuce
- 1 Capsicum
- 2 tomatoes
- 1 little can of corn
- 1/2 cup cilantro, chopped
- 3 spring onions, chopped
- 2 limes squeezed
Serve with:
- Guac - red onion, garlic, salt, 1 lime, cilantro, in a blender
- Corn chips
- Tortilla wraps
How:
Beans: If you’re using dried beans, rinse and place in water the night before. Start to cook 20 earlier and cook the beans on low heat.
If you’re using a can of beans just add in a pot with the chopped onion and tomatoes 1/2 of the spice mix, cook on low heat for 7 min then add the corn.
Mince:
Add half the Tj’s Chorizo in a pan with the remaining spice mix, and the chopped onion and tomato. If using normal tofu, tear apart using your hands, add 1 tsp veggie stock as well as the spice and veggies.
Salad:
While all is cooking on low heat, chop your salad, make your guac and heat your tortilla chips in the oven, adding vegan cheese is a major plus.
Drown that bowl in delicious salsa and lime and enjoy!
