COMFORT IN SHEPHERDS PIE

Simplified vegan Shepherds Pie, just for youu. A filling old english dish which is open to play around with. Add mushrooms, carrots and green beans if you have, or even and walnuts to make it extra interesting. I used what I had lying around, which is how it ended up being so simplistic. You can use cans of lentils and pre made/ powdered mashed potatoes to make it even easier and quicker but I would recommend homemade mashed. It’s just not the same. 

4 people 40 minutes 

Lentils: 

  • 2 cups dry lentils + 4 cups water or 2 cans lentils 
  • 3 garlic cloves 
  • 1 bay leaf - gives it a meat like flavour 
  • 1 tsp veggie stock 
  • 1/2 tsp smoked paprika 
  • Pepper 
  • 1/2 tsp dried oregano 

1 How:
Start by rinsing and boiling the lentils. Add all the ingredients and let boil till water is gone/lentils are ‘sprouted’, about 20 minutes. If you’re using cans, simply mix in the ingredients with the lentils and combine with the tomato mix later in the recipe. 

Mashed potatoes: 

  • 6 small or 3 big potatoes 
  • Salted water to cover while they boil 
  • 3 Tbsp vegan butter like Earth Balance or olive/coconut oil 
  • Nutritional Yeast - Optional, gives a cheese flavour 
  • 1 tsp veggie stock 
  • 2 fed finely chopped garlic 
  • 1/4 Almond milk - optional, only if you don’t like your mashed potatoes not so rough 

2 How:
While lentils are boiling, rinse and clean potatoes, peel them if you’d like to but we keep it on as the peel has great nutritional value. Same goes for carrots. Just buy them organic and give them a really good wash.
Cut the potatoes in cubes of 4 and boil in water with a little bit of salt. When they are soft, let rinse of hot water, return to pan and use a steady specula to mash the potatoes. Add butter/oil as well as garlic and the rest of the ingredients as they are being mashed. 

Tomato mix: 

  • 2-3 tomatoes, cut into pieces 
  • Handful of sliced mushrooms
    1 onion, cut into pieces 
  • 3 cups fresh spinach 
  •  2 cloves chopped garlic 
  •  Sundried tomatoes 

3 How:
While lentils and potatoes are boiling, chop the ingredients into pieces, place in a pan with some oil and sauté for 3 minutes. Let rest while you wait for the lentils. Combine 4:
Heat the oven to 200C / 400F? When lentils, mashed potato and tomatoes are all done, start by mixing the tomato mix and the lentils, move to a oven safe shape and cover with the mashed potatoes. Bake for 15 min til potatoes are golden on the top.
Remove and cool for 5 min. Top with long onions and soy sauce or even ketchup if preferred. Ops don’t eat the bay leaf. Just like lasagne, this dish gets even better over night.
