SWEET POTATO BROWNIES

Valid breakfast just saying. Serve with fruit or blended frozen bananas.

Ingredients 

  • 1 cup chocolate chips, melted - or 3/4 raw cacao powder
  • 1 cup all purpose flour, or whole grain
  • 1/2 teaspoon salt 
  • 1/4 teaspoon baking soda 
  • 2 tbsp of ground flax seed with 3 tablespoons warm water, let chill for 5 min
  • ¾ cup  brown sugar (or cane sugar or coconut sugar) 
  • 1 medium sweet potato peeled, cubed and boiled till soft
  • 3 pitted dates
  • 1/2 cup (100g) liquid/melted coconut oil 
  • ¼ cup water 
  • 1 teaspoon pure vanilla extract 
  • 1 cup chocolate chips (unmelted)

Peel, cube and boil the sweet potato, when soft let it drain of the water. If using chocolate chips, melt in a microwave(30sec), or by having it in a little bowl which you then place in a pot with hot water. Mix all the dry in a bowl, mix the ground flax seed(you can have whole flax seeds dry in a blender) with hot water in a separate bowl. Place the drained sweet potato in a blender with the date and the wet ingredients, add the flax seed mixture. Proceed to mix with the dry ingredients and add chocolate chips(less is not more in this situation).

Grease a pan and add the mixture which is then baked at 170 C/325 F for 30 min, however to assure it’s gooey, check it around  20 min by poking it with a knife. You do not want it to come out clean. If you want it more solid bake for 35 min. 

Any day starting with a lot of chocolate is a good day
